This pesto zucchini pasta recipe is from Elite’s fresh local food service partner, FitFoodMKE. Everyone loved this healthy and fresh recipe that can be served as a side or your main dish.
Pesto Zucchini Pasta Recipe
Serves 4
Zucchini Pasta Ingredients:
- 3 medium zucchini
- 1 cup button mushrooms
- 1/2 cup sundried tomatoes
Zucchini Pasta Directions:
Use a “spiralizer” to shave zucchini into “pasta” (cut long strands). Then cut mushrooms and sun dried tomatoes julian style. Place mushrooms on sheet tray and drizzle olive oil lightly over mushrooms. Place sun dried tomatoes aside. Bake mushrooms at 350 degrees for 15-18 minutes or until browned.

Pesto Sauce Ingredients:
- 3 cups fresh basil leaves
- 1 1/2 cups chopped walnuts
- 4 cloves garlic, peeled
- 1/4 cup grated Parmesan cheese
- 1 cup olive oil
- salt and pepper to taste
Pesto Sauce Directions:
In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.
Pesto Zucchini Pasta Plating:
Combine all components and serve cold.
