Happy National Pancake Day! Because pancakes are loaded with carbs and syrup adds even more calories, we found some healthier alternative pancake recipes. Celebrate National Pancake Day with one of these delicious healthy pancake recipes!

Banana Pancakes

Eliminate some unwanted carbs with these pancakes that use bananas as their base! The bananas and steel cut oats are great energy to start your day. Original recipe from Tasty.co.

Ingredients (4 servings):

  • 2 ripe bananas
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup quick-cook oats
  • 1 teaspoon cinnamon

Instructions:

  1. Mash bananas with a fork in a large bowl until smooth. Mix in eggs and vanilla until well combined, then mix in oats and cinnamon.
  2. Let batter sit for about 5 minutes so oats can soak up the mixture. The batter will hold together better.
  3. On medium heat, pour one scoop (see note below) of pancake patter into a non-stick skillet (or use cooking spray). Smooth out batter to form an even layer. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.
  4. Top pancakes with your favorite garnish such as walnuts, banana slices, or maple syrup.

*Note: Use ½ cup for scooping the batter to yield 4 thicker pancakes; Use ⅓ cup to yield 6 smaller pancakes.

Lemon Greek Yogurt Pancakes

If bananas aren’t your thing, try these Lemon Greek Yogurt Pancakes for a little extra protein! Each pancake has about 4 grams of protein. They are light, fluffy, delicious, and a healthy alternative to traditional pancakes! Original recipe by Kristine’s Kitchen Blog.

Cook Time: 15 minutes

Total Time: 25 minutes

Servings: 8

Ingredients:

  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • zest of 2 medium or 3 small lemons
  • ¼ cup lemon juice
  • ¾ cup milk
  • 1 cup plain Greek yogurt (2% or full fat)
  • 2 eggs
  • 2 tablespoons honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • Strawberries and/or maple syrup for garnish

Instructions:

  1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest. Set aside.
  2. In a liquid measuring cup, stir together the lemon juice and milk. Set aside while you prepare the rest of the wet ingredients.
  3. In a large bowl, combine Greek yogurt, eggs, honey, and vanilla. Whisk until well combined. Whisk in the milk-lemon juice mixture until smooth.
  4. Pour the dry ingredients into the wet and, using a spoon, stir until barely combined. The batter will be very thick. Be very careful not to overmix. Let stand for 5 minutes.
  5. Heat nonstick pan or griddle over medium heat; spray with cooking spray.
  6. Scoop ¼ cup portions of batter onto the hot griddle. Cook on the first side for 2-3 minutes, until bubbles begin to form. Flip and cook on the second side, 2-3 minutes more. Serve with fresh berries and maple syrup.

Additional Notes: Kristine notes that white whole wheat flour is best because it has a milder flavor, but you can substitute regular whole wheat flour or all-purpose flour if need be. For the best light and fluffy pancakes, don’t mix the batter too much. Only mix until the flour is incorporated.
